Billy Wagner

Billy Wagner is a German sommelier and restaurateur who grew up in the former East Germany and built his reputation in Berlin's dining scene, twice named Germany's Sommelier of the Year (2011, 2012). In February 2015 he opened Nobelhart & Schmutzig, a Michelin-starred restaurant built on a strictly local philosophy that sources every ingredient within roughly 250 km of Berlin. In 2024 he and culinary director Micha Schäfer won the Sustainable Restaurant Award at The World's 50 Best Restaurants, where the restaurant has ranked as high as No. 17.
