Jaime Pesaque

Jaime Pesaque is the chef behind Mayta in Lima, Peru, and a champion of sustainable cuisine. He has worked extensively on recovering the biodiversity of the Ica region of Peru with his Yachay project during the pandemic, focusing on fish species that need to be eaten to prevent the destruction of other species. Following the opening of Mad Burger and 500 Grados in Lima, in 2021 he launched Sapiens, showcasing open-flame techniques with vegetables, seafood, meat and grains.
