Aitor Arregui

Aitor Arregui is chef-patron of Elkano in Getaria, a fishing village on the Basque coast famous for its wood-fired fish. Steward of the Cantabrian fishing culture behind the restaurant, he learned from the sea that defines the region's identity. The menu's star is the whole grilled turbot, cooked over coals in the traditional Basque manner. Elkano appeared at No. 24 on The World's 50 Best Restaurants 2025.
