James Henry

James Henry is Australian co-chef of Le Doyenné in Saint-Vrain, plating straight-from-the-estate produce grown regeneratively on the Mortemart family's land outside Paris. His approach to cooking is rooted in provenance and direct relationships with the land that supplies the kitchen. Le Doyenné appeared at No. 77 on The World's 50 Best Restaurants 2025.
