The story
Born Madrid 1979, raised in Usera district by grandparents. Grandmother introduced him to cooking as a child. Drawn to Japanese culture since adolescence, traveled to Japan, where his culinary style was shaped. Currently the itamae (sushi chef) at Tora in Madrid, preparing the omakase at the counter.
