Josh Niland

Josh Niland is an Australian chef and co-owner, with his wife Julie, of Saint Peter in Sydney, opened in 2016. Born c.1988 in Maitland, NSW, he apprenticed locally and worked at Heston Blumenthal's Fat Duck development kitchen and Sydney's Fish Face before pioneering his 'gill-to-fin' whole-fish philosophy and fish-butchery techniques. His 2019 The Whole Fish Cookbook won two James Beard Awards — Australia's first in the Book of the Year category — and his fish-handling approach has reshaped modern seafood cookery.
