Kristian Baumann

Kristian Baumann is chef-patron of Koan in Copenhagen, which earned its first Michelin star in 2024. Born in Denmark and with Korean heritage, Baumann spent years exploring the street kitchens, temples, barbecue culture and royal court cuisine of South Korea — experiences that shaped his cooking with a "sincere calmness." His dishes showcase Danish upbringing combined with Korean technique and ingredients, served at Langeliniekaj in Copenhagen. Koan debuted at No. 91 on The World's 50 Best Restaurants 2025.
